Part of our mission is to reduce the amount of input we use. Reducing inputs is very important to Harris Organic's way of managing our distillery; we believe in the slow food process of organic production, which is important for both physical and environmental health. When making our organic vodka, we use very little artificial energy. For example, we use a pot still that is heated by wood, and we store our products in an underground cellar that stays cool. Our organic brandy is aged in oak barrels and then sealed in glass bottles that can be recycled and use natural cork. We use much less electrical energy to make a bottle of organic vodka compared to the average in Australia. The other part of our philosophy is to make the best organic vodka, organic ethanol, organic alcohol, and organic brandy in Australia.

Harris Organics wants to make chemical-free organic vodka and brandy that are healthy and good for you when enjoyed in moderation, and also kind to the environment. Our top-quality vodka isn’t fined or filtered, and it contains no animal-based additives. We can make the first certified organic vodka in Australia because we are self-sufficient in producing organic brandy spirits.

Traditional Wood-Fired Brandy Distillation

At Harris Organic, brandy isn't just a product; it is a labor-intensive craft. Chief distiller Duncan Harris utilizes a traditional copper pot still, uniquely heated by a natural wood fire.

Unlike modern gas-automated stills, wood-firing requires a master’s touch to maintain the precise temperature curves needed to capture the delicate "heart" of the grape spirit.

  • Double Distilled: We distil our organic wine twice to produce a pure, rich eau de vie.
  • Oak Maturation: Our brandy ages slowly in hand-selected oak barrels in our cool underground cellar.
  • Zero Additives: No caramel colouring, no prune juice, and no sugar. The deep amber colour is 100% derived from the wood.

This "Slow Food" approach ensures a spirit of unparalleled smoothness and complexity that honours the 100-year history of the Swan Valley.
